  • 1 cup sugar-free Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar-free sweetener (like stevia or erythritol)
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup chopped nuts (almonds, walnuts, or pecans)
  • Sugar-free whipped cream (optional)
  • Fresh mint leaves for garnish (optional)

Prepare the Yogurt Mixture:
In a bowl, mix the sugar-free Greek yogurt with vanilla extract and sugar-free sweetener until well combined. Adjust the sweetness to your taste.

Assemble the Parfait:
In serving glasses or bowls, start by layering a spoonful of the yogurt mixture at the bottom.
Add a layer of mixed berries on top of the yogurt.
Sprinkle a portion of chopped nuts over the berries.

Repeat Layers:
Repeat the layers until you reach the top of the glass, finishing with a layer of berries and a sprinkle of nuts.

Place the parfaits in the refrigerator for at least 30 minutes to chill and allow the flavours to meld.

Before serving, you can top the parfait with a dollop of sugar-free whipped cream if desired. Garnish with fresh mint leaves for a burst of color and added freshness.

Serve chilled and enjoy your delicious no-bake diabetic-friendly berry parfait!

This dessert is not only easy to make but also rich in antioxidants from the berries and provides a satisfying crunch with the nuts. Adjust the ingredients to suit your preferences and dietary needs.
